  • 2 cups cooked and shredded chicken breast
  • 1 cup diced sweet potato (cooked)
  • 1 cup green beans (cooked and chopped)
  • 1/2 cup pitted black raisins
  • 1 grated carrot
  • 1/2 cup chopped dried apricots
  • 1 cup natural full fat yogurt (170 g)
  • 1 tablespoon Worcestershire sauce
  • Salt, pepper and chopped parsley to taste

Preparation mode:

In a bowl, combine chicken, potatoes, green beans, carrots, raisins, and apricots. Arrange on a salad bowl or plate and set aside. Season yogurt with Worcestershire sauce, salt and pepper. Drizzle salad, sprinkle with parsley, cover and refrigerate for 1 hour. service.

  • 1 cup crustless white bread, diced
  • 8 tablespoons olive oil
  • 4 chicken fillets
  • Salt and black pepper to taste
  • 1 tablespoon oil
  • 6 cups iceberg lettuce, washed and chopped
  • 1/2 cup grated parmesan cheese

Sauce:

  • 1 tablespoon yellow mustard
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Preparation mode:

Arrange bread cubes on a baking sheet, drizzle with 1 tablespoon olive oil and bake in preheated oven for 12 minutes or until golden brown. For the sauce, in a bowl, combine the mustard, vinegar, honey, salt, and pepper. Pour in the remaining oil, whisking with a fork until thickened. Refrigerator reserve.
