Skin-and-bones chicken pieces like coxinha and wing can taste even better with sauces. The offer is valid regardless of the method of preparation – deep-fried, air-fried, grilled or in the oven.
In the show “Vai Ter Churras”, host Bruno Salomao shows three simple recipes that go well with chicken. In general, the cooking method is similar: combine the ingredients in a saucepan and thicken the liquid.
Oriental teriyaki soy sauce, seasonings such as garlic and ginger, and sweet ingredients such as pineapple juice and brown sugar. Cornstarch diluted in water produces a thick, dark, sweet sauce that is usually topped with sesame seeds.
The other two variants come from the United States. In addition to the well-known kebab with a bittersweet taste due to the combination of ketchup and vinegar, Bruno relies on the so-called buffalo meat. Made with hot sauce and cayenne pepper powder, it’s just spicy!

teriyaki
INGREDIENTS
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup honey
- 1 tablespoon grated ginger
- 2 cloves of grated garlic
- 1/2 cup brown sugar
- 1/2 cup water
- 1 tablespoon cornstarch
- Sesame (optional)
PREPARATORY MODE
Place pineapple juice, soy sauce, honey, ginger, garlic and sugar in a pan. After boiling for eight minutes, thicken the sauce by mixing the cornstarch with a glass of room temperature water. Gradually add to the skillet until the sauce is gelatinous. Mix the sauce with the chicken in a bowl and sprinkle with sesame seeds if you like.

buffalo
INGREDIENTS
- 1 cup chili sauce
- 1/2 teaspoon cayenne pepper
- 2 tablespoons Worcestershire sauce
- 100 grams chilled unsalted butter
PREPARATORY MODE
Place chili sauce, cayenne pepper and Worcestershire sauce in a hot skillet. When it boils, add the butter and mix with the fouette until a homogeneous mixture is formed. Mix the sauce with the chicken in a bowl and add more cayenne powder if you like.

INGREDIENTS
- 1 tablespoon olive oil
- 2 tablespoons full seasoning (find out here)
- 2 cups ketchup
- 2 teaspoons mustard
- 1 cup cola
- 1/2 cup spirit vinegar
- 1/2 cup cane molasses
- 2 tablespoons Worcestershire sauce
- Green onions (optional)
PREPARATORY MODE
Heat the oil in a large skillet and brown the seasonings completely. Then add the rest of the ingredients, stir and cook for 8-10 minutes. Stir from time to time so that it doesn’t burn. Mix the sauce with the chicken in a bowl and, if you like, add green onions.
