In this Sunday issue of Jornal do Campo (12), Francesca Alves, a businesswoman from Itumbiara, shared a recipe for a delicious caribo traditional in the south of Goiás. The dish is prepared from pastel dough and a large amount of toppings, see below how to cook it.

- 700 grams of chicken breast
- 700 grams boiled cassava
- 2 tablespoons margarine
- 200 grams of sour cream
- salt to taste
How to make yeast dough
The recipe is made from traditional pastel dough, but before you put the filling, it must be fried. The businesswoman teaches how to wrap the dough in a wooden punch to give it “shape” and then fry it in hot oil.
The filling can be made from different mixtures, but Francesca used the traditional one, with chopped chicken fillet. To cook, simply cook the cassava and mash it to make a puree.
Then make a white sauce and put it with cassava. Knead until you get a very smooth dough. For the sauce, the businesswoman used margarine and onions mixed with milk in a blender.

- Spread a layer of puree, top with another layer of shredded chicken and grated mozzarella.
- Place the caribo in the oven or microwave to melt the cheese.
The recipe yields 15 caribou.
