- 2 tablespoons oil
- 1 chicken, about 1.5 kg, cut into small pieces
- Salt, pepper and chopped parsley to taste
- 1 cinnamon stick 2 cm long
- 1 bay leaf
- 2 chopped celery stalks
- 1 large chopped onion
- 1 garlic clove
- 2 medium grated carrots
- 2 and 1/2 liters of water
- 1 and 1/2 cups white rice (washed)
- 2 vegetable stock cubes
- Lemon and olive oil to accompany
Preparation mode
Heat a large skillet with half the oil and fry the chicken until golden brown. Pour in water, season with salt, pepper, cinnamon and bay leaf and cook over medium heat for 30 minutes or until soft. Strain through a sieve and save the broth. Roughly chop the meat, removing the skin and bones. Heat a frying pan with the remaining oil and fry the onion and garlic. Add celery and carrots and simmer for 5 minutes. Add cooking broth and cover with water. Add vegetable broth, rice and cook for 15 minutes or until soft. Transfer to a tureen and serve with lemon and olive oil.
