Gastrologer Fernando Ruiz teaches you how to cook juicy chicken in orange with ginger and honey. The products used in the recipe are exported from Paraná to countries such as China, Japan, Australia and the USA.

- 500 grams chicken thigh and drumstick
- 2 heads of garlic
- 1 tablespoon grated ginger
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon coriander seeds
- 3 tablespoons honey
- 1 orange (zest and juice)
- 1 lemon (zest and juice)
- salt to taste
- Herbs (thyme)
Start cooking by seasoning the chicken thighs with soy sauce, sesame oil, orange and lemon juice, zest and honey.
Tip: Honey is what gives meat its golden color.
Also add grated ginger, coriander seeds preferably freshly ground and salt to taste. Be careful with the amount of salt as soy sauce is used in the preparation. Finally, add whole cloves of garlic. Place in the refrigerator for four hours to marinate.
Then line the bottom of the roast with orange slices and place the chicken on them. Pour all the sauce over the chicken and leave the garlic cloves together in the roaster. Cover with aluminum foil and bake in a preheated oven at 180 degrees for about an hour and a half.
In the last half hour, remove the foil to brown the chicken. After that, remove from the oven, garnish with fresh herbs and serve.
