The Perfect Spinach Chicken Recipe for a Late Summer Dinner
It’s fast, convenient, tasty and healthy, and the best part is that the oven does almost all the work.
At this time, when the days are getting longer, all you want to do is spend time outdoors, whether it’s on the terrace with friends or in the park with the kids. All we don’t want is hours of cooking at home. If you’re looking for practical, tasty, and above all, healthy recipes, we’ve found the perfect option for your list.
Chicken breasts and spinach are two ingredients you need to get rid of the idea that eating vegetables is boring. The vegetables included in this version, for example, have several health benefits: they are rich in mineral salts such as phosphorus, iron and calcium, vitamins and antioxidants and are therefore good for the skin, for the body’s immunity, for bones or blood pressure.
There are some very creative ways to include spinach in your diet, and this suggestion by Sandra Nereu from the blog “Panelinha dos Sabores” is one of them.
What you need
– 100 ml oatmeal or soy cream
– 1 teaspoon dried garlic or minced garlic
– 1 teaspoon dried or fresh chopped parsley
– 1 teaspoon chili paste (or paprika)
– 1 teaspoon Dijon mustard
– 2 chicken breasts
– frozen spinach to taste
– 50 grams of grated low-fat cheese
how to do
First, preheat the oven to 180C. Then pour the soy cream onto the tray and spread it out. Add the garlic, parsley, red pepper sauce, salt and mustard and toss with the sauce.
Place the chicken breasts on top and turn them over so they are coated on both sides. Arrange frozen spinach cubes around. And sprinkle with grated cheese.
Bake for 30 to 40 minutes (depending on the size of the chicken breasts) in the lowest part of the oven to keep the cheese from burning until the ingredients are done.
